You have walked passed or possibly even purchased a package of those little colorful potatoes, then gotten home and realized, I have no idea what to do with them. You are not alone, I promise.

There are so many different ways to do them but we aren’t going to worry about all of those, I am going to show you a way that I really enjoy that gives the potatoes a pop of salt and savory which gives you a lot of freedom when it comes to sauces to accompany them.

 

Ingredients

  • 3lbs Marble potatoes
  • 1 cup or so of kosher salt

Preparation

In a sauce pan place potatoes and pour in salt, and cover with water. Bring the water to a boil for 15 minutes.

After 15 minutes pour off most of the water, leaving a little bit in the bottom of the sauce pan. Lower the heat to medium and continue to simmer for 5 more minutes. This will start to dry out the potatoes which will form a nice salt crust.

Drain the rest of the water and let the potatoes sit for another 5 minutes to finish drying and forming the salt crust.
