I honestly can’t tell you which version I like of this more, the sweet or the savory. So I will just continue to make and enjoy them both. Please do the same!
- 1/2 of large red onion (or yes possibly 1 whole small one) small diced
- 2 cloves of garlic minced
- 2 sprigs of rosemary chopped fine
- 4 sage leaves chopped fine
- 2 tablespoons of olive oil
- Salt and pepper to taste
Over medium heat place onions and garlic to caramelize and soften, stirring often. This should take about 20 minutes. Trying to cook too quickly will result in burning or crisping of the onion instead of softening. A minute or 2 before the garlic and onion mixture is finished, toss in the chopped herbs and allow to become aromatic
In a ziplock bag place 1 pound of sweet potato along with a splash of water and close all but 1-2 inches. Cook in microwave on high for 6-8 minutes. Once cooked through and soft, place in a food processor and pulse until smooth. Then place in large bowl.
Once the onion and garlic is cooked, fold it in to the sweet potato and adjust the seasoning to taste.
