Sweet potatoes are crazy versatile and very easy to manipulate to try out new things that you might not realize they were capable of doing. Here is a staple that I almost always have batched in my fridge along with a savory version to have whichever my mood is that day. Please try both, and then some!

  • 1 pound of sweet potatoes – peeled and cubed
  • 1/2 cup of greek yogurt
  • 1 tablespoon of cinnamon
  • 1/2 teaspoon of ground cardamom
  • 4 tablespoons of sugar free maple syrup
  • pinch of salt

Place the cubed and peeled potatoes in a ziplock bag along with a splash of water. Close the bag almost all the way, leaving and inch or 2 open to allow the steam to escape. Place in microwave and cook on high for 6 to 8 minutes or until cooked through and soft.

Remove the sweet potato from the microwave and place in a food processor. Pulse the sweet potato to chop it into a near smooth constancy. Add in the yogurt, cinnamon, cardamom, maple syrup, and pinch of salt and then continue to blend until smooth.
